Grilled Breakfast Pizza


This was a pretty cool recipe because it was something different I would not normally have thought of. Admittedly, this was the second try of this recipe, our first try turned into Grilled Nacho Pizza. We tried in that one to crack eggs right on top of the pizza, but they wouldn't cook. Scrambling the eggs before adding them worked well this time. I thought this pizza tasted a lot like an egg and cheese bagel sandwich, which was really good.

Ingredients:
-refrigerated pizza dough
-5 eggs
-1 cup shredded cheddar cheese
-2 oz feta cheese
-olive oil


Scramble the eggs before you start.

Rub some olive oil onto the bottom of the pizza crust
before putting it on the grill so it doesn't stick.
Cook for about 2-3 minutes on one side before flipping.
I was nervous about using the raw pizza dough because I wasn't sure it would cook the whole way through and I thought it might fall through the grates of the grill, but this actually worked great, it got to be the perfect amount of crispiness. I put the grill on low heat though so the bottom wouldn't get burnt.

Top with the scrambled eggs.
Top with shredded cheese.
I added a little bit of crumbled feta.
Cook for another 6-7 minutes. I cut into a piece of mine
to check to see if the inside was cooked, I needed to put
in back on the grill once for about 2 minutes to get the inside
cooked, but eventually cooked pretty evenly.


I like this a lot because the ingredients are flexible, you can add other ingredients that you like or whatever you have on hand in your kitchen. I added feta on only half of the pizza because I like but my brother doesn't, so it was really easy to customize for each person even.

Grilled Nacho Pizza


This combination of jalapenos and cheese tasted just like eating nachos at a baseball game. Originally, this started out as us trying to make a breakfast pizza, but the jalapeno and cheddar combination, along with the crispy bread was good without any breakfast type ingredients. 

Other Grilling Wednesday Recipes: BBQ Maple Balsamic Burger with Sharp Cheddar, Grilled Pineapple with Honey, Cinnamon and Lime, Grilled Caprese Sandwiches, Grilled Spicy Pepper Poppers, and Red White and Blue Burger.

Ingredients:-Pre-made pizza crust
-1 cup bechamel sauce (we made it in a previous recipe here)
-1 cup shredded cheddar cheese
-1 jalapeno, sliced
-Other desired toppings

Rub the grill grates with a little bit of olive oil to prevent the crust from sticking.
Cook one side on the grill until it is a little brown, about 5 minutes.
Flip it over, and spread the bechamel sauce over.
Sprinkle with cheese.
Add jalapenos.
Cook until the cheese melt and the bread is crispy, about 5-6 minutes.

The jalapenos made this pretty spicy, the flavor was great. This was pretty easy to make, other than making the bechmel, there wasn't much prep or cleanup, which is great for a good snack on the grill.

Padana Pizza


When we went to England last year, we ate at a restaurant called Pizza Express where we had this Leggara pizza. You can check out a picture of that on another blog post about all of the food we ate in England here. It was so good we decided to make our own version of it. It is a unique pizza because the middle is cut out and filled with a salad, so it is low calorie, and had different things than the traditional pizza ingredients.

Ingredients:
-Pizza Crust
-Pizza Sauce
-Tomatoes
-Spinach, wilted
-Goat Cheese
-Red Onion
-White Onion, caramelized 

Make the pizza crust. We used the kind that comes in a package
and just add water.
Make sure you grease the bottom, we had a little trouble with
it getting stuck taking it off.
Top with pizza sauce.
And goat cheese.
We cooked our white onion and spinach a little bit before adding it.
Add some tomato and red onion.
It looked really good even before we cooked it.

We cooked ours for about 10 minutes at 350, which was what our crust needed to cook.

So the interesting part here is cutting the hole in the center of
the pizza, and adding the salad. We just added some spinach
with some balsamic vinaigrette dressing.

Everyone really liked this pizza. It was really different from traditional pizza, so it was great to change things up and make this one. Since we used the crust mix it didn't take too long, but we still got to eat a pizza that was homemade and had really fresh ingredients.
