Spicy Hawaiian Burger


Welcome to the last grilling Wednesday! This recipe is the perfect transition to the next Wednesday theme which is sandwiches. From September through November every Wednesday we will be featuring a different sandwich recipe.

Ingredients:
-4 black bean veggie burgers
-4 pineapple rings
-4 slices pepper jack cheese
-4 hamburger buns
-Teriyaki sauce

Grill the veggie burgers and pineapple rings,

Top each burger with pineapple rings and pepperjack.

Add teriyaki sauce to taste.

This was really good! I really like grilled pineapple with teriyaki sauce and this burger was a really great way to utilize this in a sandwich.

Black Bean Mushroom Burger


I saw this at the beginning of summer on Food for Thought and I thought this would be a great recipe to try on the grill. Ours turned out to be a little more like a Black Bean Mushroom Sloppy Joe rather than a burger, but that still worked well for a outdoor summer food, and it tasted really good.

We made these in a skillet on the side burner of our grill while everything else for the meal was grilling on the grates.

Ingredients:
-2 tablespoons olive oil
-1 yellow onion, chopped
-8 oz mushrooms, roughly choped
-1 15 ounce can black beans, drained and rinsed
-1 cup cooked brown rice
-1 teaspoon chili powder
-1/4 teaspoon black pepper
-1 tablespoon barbecue sauce
-1 egg white
-salt
-Any desired toppings

Cut the mushrooms and onions into chunks.
Saute for about 5 minutes in oil until it gets soft.
Blend the black beans with the mushrooms
and onions.
Mix everything from the blender with cooked rice
and seasonings.
The original recipe said that the mixture might not be solid
enough to form patties, but leaving it in the refrigerator for 20
minutes would firm it up. Mine didn't really get firm enough,
so we put them in a frying pan and made foil into circles to shape the burgers. 
They held together enough to take off the foil, and they did get brown on
 the bottom,but they still didn't stay together well to flip it.
Top with cheese or any other toppings you like.

I thought the taste of the rice mixed with the black beans was really good! These were a little more work than the recipes I normally make, but it was nice to have a vegetarian burger different than the usual store bought kind.

Pizza Burger


This recipe is adapted from the Pioneer Woman's recipe Supreme Pizza Burgers.

Ingredients: 
-1 bun
-1 veggie burger
-1 1/2 cups of mozzarella cheese
-2 tablespoons of marinara
-1 shallot, sliced thinly
-Any other desired pizza toppings

Adjust the recipe for however many servings you need, I was just making one.
Grill the burger most of the way through, then top with one layer of cheese.
Add the shallots and any other desired toppings.

Top with more cheese.

Serve with marinara sauce and a toasted bun.

This burger was good, but not my favorite out of every burger we've made. J. really liked the pizza burger that he made, he also included more toppings on his, I think I'll just keep pizza and burgers separate for now.

Red, White and Blue Burger


Happy Grilling Wednesday! Tomorrow is the Fourth of July. I love going to see fireworks with J so I'm really excited about that.

We're also going to Becky's lake house for the weekend so we have a relaxing weekend ahead of us. For those of you who aren't frequent readers of the blog the lake house we go to has no oven! That means when we go there we do a lot of grilling and try some new recipes that don't involve an oven or stove. Becky and I have a lot of great meals planned for while we are there and they're all going to make an appearance here in July.

This recipe is inspired by the Fourth of July, we wanted to incorporate this grilling recipe with our other Fourth of July recipes -- with red, white and blue ingredients this an easy, but flavorful addition to any BBQ you might be hosting over the next few days.

Other Grilling Wednesday Recipes:  BBQ Maple Balsamic Burger with Sharp Cheddar, Grilled Pineapple with Honey, Cinnamon and Lime, Grilled Caprese Sandwiches, and Grilled Spicy Pepper Poppers.

Ingredients:
-4 veggie burgers, use your favorite or make some
-4 hamburger buns
-1 red pepper, roasted and sliced
-Blue cheese crumbles
-1 onion, sliced thick

In order to roast the red pepper you can follow the steps from this blog. There are detailed steps there from the first time I made a roasted red pepper, making roasted red pepper is really easy, but if you don't want to make your own you can purchase them at the store.

Grill your burger and onion slices.
Top the burger with the roasted red pepper slices, blue cheese and grilled onion.
I added a little mayo to mine also.

This burger was good, but I don't think it was the best that we've made. The one thing that I didn't like was the thick slice of onion, it would have been better to serve the onion differently, the combination of the roasted red pepper and blue cheese was really good though. If I made this again I would use less onion, but keep the blue cheese and roasted red pepper.

Maple Balsamic Burger with White Cheddar


Happy Grilling Wednesday!! This is the second post for Grilling Wednesday and I hope you're ready for some great grilling recipes from now until the end of August. We have a variety of grilling recipes planned from main dishes to side dishes to desserts.

This recipe is adapted from a recipe from Adventures in Cooking.

Grilling Wednesday Recipes: Grilled Pineapple with Honey, Lime and Cinnamon.


Ingredients:
Burgers and Fixings
-1 Small Onion, cut into 1/2 inch thick slices
-5 Pretzel Buns
-5 Leaves of Romaine Lettuce
-5 Slices White Cheddar Cheese
-5 Veggie Burgers (I used pre-made, or you can make your own)

Maple Balsamic Sauce
-1/2 Teaspoon Salt
-1/4 Teaspoon Pepper
-1/2 Cup Ketchup
-6 Teaspoons Balsamic Vinegar
-4 Teaspoons Maple Syrup

To make the sauce, whisk together all of the listed ingredients, adjusting the seasoning, maple syrup and balsamic vinegar to your preference. 
Grill your veggie burger, adding the sliced white cheddar during the final minutes in order to get it melted.
Grill the onion slices until nice grill marks appear. This should be done while the cheese is melting.
Build your burger, romaine lettuce, then the veggie burger, cheese and sauce.
Add the grilled onion. 

This burger was fantastic. I've been raving about it to anyone who will listen, this is about to become my favorite set of burger toppings. The maple balsamic ketchup was the right about of sweet and tangy (the maple gave a subtle sweetness, but the tangy bite of the balsamic was much more prevalent). The pretzel bun was also a nice touch, it was a lot denser than a typical burger bun. If you're looking for a way to jazz up a burger, this is it.
