Baked Orange French Toast

I am always looking for new breakfast recipes because that is the meal that we are able to make the most together. I made this recipe on a whim because I already had all of the ingredients in my kitchen and because J. is super picky so even with breakfast it's difficult to find recipes that he will enjoy.

Recipe from Scattered Thoughts of a Crafty Mom.

Ingredients:
-7 eggs
-1/2 cup orange juice (I used the juice from 1 large orange)
-1/2 cup milk
-1/3 cup sugar
-1 tablespoon orange zest
-1 tsp vanilla
-1/4 tsp nutmeg
-8 slices of bread
-butter
-powdered sugar (Optional)

Whisk the first seven ingredients together in a large bowl.

Pour over your bread and soak for 5 minutes, turning once.
I used a 9x13 pan and a 8x8 to soak eight pieces of bread.

Put the bread on a greased cookie sheet covered in foil.
Bake at 375 for 10-12 minutes, flip and then bake for 10-12 minutes longer.

Serve with powdered sugar and syrup.

I have to be honest, I didn't love this recipe. The orange flavor was very pronounced (which is good since this is orange baked French toast), but I just didn't love it. J. on the other hand liked this a lot, he ate four pieces of it plus half of one of mine. If I made this again, I would cut the recipe in half and make it just for him.

Campfire Orange Cakes

I have to start off saying this was not one of our more successful recipes. It looked like a really cute and fun idea, but ours didn't work quite as well as expected. The top of the cake inside the orange was cooked, but inside was pretty runny still. The flavor was good, you really could taste a good amount of orange through the cake. I think this may have worked if we cooked it for a little longer, but we did it for 20 minutes like the recipe said, and there was really no way to tell if the inside was cooked without unwrapping it and eating the top first.

I've seen this recipe a few times on pinterest, and I used the instructions here from ljc.

Ingredients:
-Orange
-Chocolate cake mix (plus eggs and oil)

Cut off the top of the oranges and hollow out the inside.
Make the cake mix according to package directions and
fill in the oranges.
Wrap in foil and put on the sides of the campfire.
Cook for 20 minutes.
Unwrap, take the top of the orange off and eat with a fork.
I'll probably be trying some more campfire recipes, I really like that concept, but probably one that doesn't need anything to cook.
