Halloumi and Vegetable Kabobs with Tropical Mango Sauce


These were a great vegetarian option for a kabob on the grill. If you haven't had halloumi, it is worth checking out. It tastes like mozzarella, so it goes great with almost any vegetable, and this sauce was really great with it.

Sauce Recipe from Undressed Skeleton.

Ingredients:
Sauce
-1 Cup Fresh Pineapple
-1 tsp. Cinnamon
-1 Cup Fresh Mango
-1 Small Peach
-2 Tbsp Sugar

-Halloumi
-Zucchini
-Green Peppers
-Onion
-Steak Seasoning

Add all the sauce ingredients in the blender.
Blend til smooth.
This can be made ahead of time. 
Assemble the skewers.
Grill for a few minutes on each side.
Make sure the cheese is big enough to not fall through
the grill. I can get a little sticky if you leave it on too long,
so be sure to check it often.
Top with sauce and seasoning.



This was really good, I definitely went back for seconds. You can use other vegetables if you want to make this kebob, I think the mango sauce would go with anything, it was just sweet enough to not be overpowering, but still have a good flavor. It was kind of the consistency of applesauce, pineapple and peach were a good combination.

Halloumi Kabobs


1,000 page views! Thank you so much for the support I'm glad that even though I have a busy life I'm able to share my hobby with you.

Halloumi was something I tried while I was in England about a month ago and the amazing thing about the cheese is that it retains it's shape when grilled. The outside crisps up while the inside remains gooey and delicious. The cheese is a little expensive (I paid about 11 dollars at Giant Eagle for mine) I promise that its worth  for not only the flavor, but for the chance to have a grilled dinner that is out of the ordinary.

Ingredients:
-Block of Halloumi cheese
-Assorted vegetables for the kabobs (I chose red and green pepper and onion)
-Italian Dressing

Gather your ingredients.

Halloumi, the most important part.

Prep your vegetables by cutting them into small triangles, skewer along with the Halloumi. 

Halloumi will break apart easily (think fresh mozzarella) so make sure to be careful when skewering and cut the Halloumi into medium sized chunks during your prep.


Brush with Italian dressing.


Grill.

Make sure to rotate the kabobs.

Halloumi was just as good as I remembered it, however, I definitely under grilled the kabob. Mine was on medium heat for 10 minutes and probably needed to go for at least 15 minutes. Remember that all grills are different though so it cook times will vary. What you're looking for is grill marks on the Halloumi and cheese that is both tender on the inside, but firm on the outside.
