Green Bean Casserole Grilled Cheese Sliders

These grilled cheese sliders are perfect if you're craving Thanksgiving, you can serve them with a light salad of eat them alone for lunch or dinner. This recipe comes from E is for Eat.

Ingredients:
-Big handful of fresh green beans
-1 clove garlic, minced
-2 tablespoons olive oil, divided use
-5-6 button mushrooms, sliced
-Fried onions 
-salt & pepper, to taste
-safflower oil (for frying)
-2-3 ounces brie, sliced 
-9 slider buns or dinner rolls
-1-2 tablespoons butter, room temperature


Slice the green beans as thinly as possible, I tried to use a vegetable peeler, but it didn't work, a pairing knife worked fine.


Thinly slice the mushrooms too. 

Saute the green beans in a little oil and garlic. Add salt and pepper.
Put back on a plate.
Do the same with the mushrooms. 
Open the slider buns and place a healthy slice of brie on each.

Add green beans, mushrooms and fried onions to each. 

I was salivating as I put these together.
Top each side with a healthy amount of butter and grill in a skillet.
Cover with a lid to help the cheese melt faster. 

You might lose some toppings, but don't despair! 
Done!
Filled with a lot of great toppings!

These were great little sliders, I really enjoyed the little taste of Thanksgiving. I made three for all of us and I was really surprised that I found these to be filling, but you can also serve them with some soup or a light salad. I think the brie was the perfect cheese for these sandwiches and I'm glad that I used packaged fried onions because it gave the sandwich a nice crunch.

Spicy Butternut Squash Grilled Cheese





April is grilled cheese month and this is our third grilled cheese this month. Earlier we had Green Grilled Cheese and Nacho Grilled Cheese. This recipe comes from Kitchen Treaty. I adapted the spices it used a bit to fit what I had in my kitchen. This was a really good spicy sandwich, so use whatever kind of pepper/seasonings you like best.

Ingredients:
-butternut squash (maybe about 1/8 of a squash per sandwich)
-2 slices bread (you can use any kind you want)
-jalapeno
-red pepper flakes
-pepperjack cheese
-butter

Cut the squash in half, take out the seeds, and bake at 375
for 45 minutes.
Scoop out some of the squash. The original recipe said to
cube it and use a blender to make a paste, but I found that
mine was already so soft that I just mashed it with a fork.
Mix in some red pepper and jalapenos.
Spread the sauce on one slice of bread.
Sprinkle with cheese.
Butter the bread and cook in a frying pan.

The squash didn't have a really strong taste, but it was a great consistency and paired well with the pepperjack cheese. Other than the time to roast the squash, this was a pretty simple grilled cheese that tasted much more sophisticated than an ordinary grilled cheese.

Nacho Grilled Cheese Sliders


Happy National Grilled Cheese Day! Becky and I are grilling up four great grilled cheese recipes for the month of April, you can find the first one, Becky's Green Grilled Cheese, here. There are two more coming this month so make sure to check back!

This recipe is adapted from from BS in the Kitchen.

Ingredients:
-Loaf of French Bread
-1 Tbsp Sour Cream
-2 Tbsp Salsa
-Colby-Jack Cheese
-1 Green Onion Stalk (chopped)
-1 Tomato (sliced)
-1-2 Handful Nacho Flavored Doritos (crumbled)
-Butter

Spread you favorite salsa on the bottom of each sandwich. 
Top with sliced cheese.

Green onions. 
Crushed Doritos. 
Tomato.
And any additional toppings. 
Top each sandwich with the other bread.
Spread each slice with butter, grill until the cheese is melted and the bread is golden brown. 
Top with additional green onions, serve with sour cream. 
Make as many as you'd like to make, I made about nine sliders. 

These were a big hit in my house, the flavors went really well together and the hint of Doritos on the inside of the sandwich was a perfect addition. These were great because any filling that you want could be added. These were also really quick to put together and with the griddle it was incredibly easy to make all of the sandwiches at once.

Green Grilled Cheese


April is National Grilled Cheese Month, so throughout the month we have some recipes for new twists on grilled cheese. It is hard to tell what is on the inside of the grilled cheese in a picture, but I thought it was cool that the ingredients were all green, it was an cool thing for this sandwich. I found the original recipe here.

Ingredients:
-2 slices bread
-mozzarella cheese
-spinach
-1/4 avocado, sliced
-olive oil

Pesto
-1 clove garlic
-1/2 small shallot, chopped
-1 teaspoon lemon juice
-handful chopped fresh Italian parsley
-handful chopped kale
-2-3 tablespoons chopped fresh tarragon
-1 tablespoon chopped chives
-¼ cup olive oil

Make the pesto in the blender. I adapted mine a bit
from the original, I used spinach rather than kale, and didn't have
tarragon or shallots. Mine tasted ok, but it would probably make
more and be easier to spread if you use kale.
After I chopped everything in the blender, I added the olive oil.
Spread the pest on one slice of bread.
Sprinkle on mozzarella cheese.
Add spinach.
Add avocado. Add to a pan with butter or oil and cook until
the bottom gets a little brown, then flip.

I liked this, it was good to get some vegetables and a new twist on a regular grilled cheese.
