Vegetarian French Onion Soup

French onion soup is my favorite soup and this recipe from Vegetarian Times is my go to French onion soup recipe. 

Ingredients 
-3 Tbs. butter
-1 Tbs. vegetable oil
-7 to 8 cups halved and thinly sliced onions (about 5 large)
-1 tsp. sugar
-1 tsp. salt
-2 Tbs. all-purpose flour
-6 cups low-sodium vegetable broth
-⅓ cup dry sherry
-1 tsp. chopped fresh thyme or ½ tsp. dried
-¼ tsp. freshly ground pepper
-1 loaf French bread, cut into ½-inch-thick slices
-10 to 12 oz. shredded Jarlsberg or Gruyere cheese (I used mozzarella) 

Slice your onions thinly, I used the slicing attachment on my  mixer.
Yes, I wore gloves...I didn't want to smell like onions for days.
Melt butter in a large pan.
Stir in onions, salt and sugar, cook one minutes stirring constantly. 
Cook covered for 10 minutes.
Cook uncovered for 15 minutes.
Add remaining butter, stir, cook 15 additional minutes
Stir in flour, cook 4-5 minutes.
Add broth, sherry, thyme, salt and pepper to taste.

Cover and simmer for 15 more minutes.
Pour into a heat proof bowl, top with bread and cheese.
Broil for 5-7 minutes.

This is the perfect recipe for when the weather gets colder. A nice steamy cup of soup, with toasty bread and melty, brown cheese. Yum!
